Abstract:
The present invention relates to a novel liquid seasoning and a process for producing the liquid seasoning. According to the invention, it is possible to provide a novel liquid seasoning and a process for producing the liquid seasoning, the liquid seasoning retaining the function of salt koji, having a satisfactory balance among umami, sweetness, and saltiness, less emitting the koji odor, and being very convenient.
