Abstract:
Provided is a low potassium food in which the taste and texture of various kinds of foods are retained without deterioration.
The low potassium food is produced by removing potassium from a food through a step for applying an electric filed to the food or a step for immersing the food in an acid, and then adding sodium and/or calcium thereto at an equivalent ratio of 0.15-1.25 to the amount of the removed potassium.
