Abstract:
Provided is a lycopene-containing oil-in-water emulsion composition that: comprises an oil phase containing 0.00001-0.1 mass% of lycopene relative to the total mass of the emulsion composition and an aqueous phase containing at least one substance selected from the group consisting of ascorbic acid, derivatives thereof, and salts of ascorbic acid or of the derivatives thereof; and that has an average emulsion particle size of 120 nm or less. Also provided is a production method for the lycopene-containing oil-in-water emulsion composition.
