Abstract:
A meal replacement pastry and a preparation method therefor. The meal replacement pastry comprises the following raw materials in percentage by mass: 1-5 parts of potato flour, 5-15 parts of dietary fiber, 10-30 parts of milk protein, 5-15 parts of collagen, 20-40 parts of maltitol liquid, 3-10 parts of coconut oil, 0.1-0.3 part of hydrochloric acid, 0.3-0.6 part of sodium hydroxide, and 10-15 parts of digestion promoting powder, wherein the digestion promoting powder is composed of orange peel, Chinese cabbage stems, and hawthorn peel, and the weight ratio thereof is 3:1:3. The processing method comprises the following steps: uniformly mixing potato flour, dietary fiber, milk protein, collagen, maltitol liquid, coconut oil, hydrochloric acid, sodium hydroxide, and digestion promoting powder, and primary-making forming; and placing pastries at the top of a pastry placing rack, conveying the pastries into a drying oven by means of a conveying assembly, closing an electric door on the left side of the drying oven for sealing, drying the pastries by means of a drying mechanism, opening an electric door on the right side of the drying oven after drying, conveying the pastries into a ventilation box, then opening the electric door on the left side of the drying oven to put in the next pastry placing rack, and the pastry placing rack moving into the ventilation box. The present invention relates to the technical field of meal replacement pastry processing. According to the meal replacement pastry and the preparation method therefor, hot air and cold air are isolated by means of the electric door, drying, ventilation and shaping processing can be rapidly and uninterruptedly performed, the three procedures are integrated and operated at the same time, and thus the labor intensity of workers is reduced and the time required for the transfer of the procedures is saved.
