Abstract:
A meat quality improver containing an enzymatic hydrolyzate of proteins. When used for meats such as those stored in frozen state and meats for foods sterilized by heating under pressure, or when added to processed, minced meat foods in the course of the preparation thereof, the improver exhibits the effects of improving the water retention of the meats, preventing the shrinkage of the meats during baking thereof, and improving the texture of the meats.
