Abstract:
A method for accurate separation and identification of oxidized triglycerides (ox-TGs) in frying oil, relating to the technical field of testing. First, upon identification of the structures of ox-TGs in frying oil by using mass spectrometry, it is found that after frying for 24 hours, the main ox-TGs are epoxy ox-TG, hydroxyl ox-TG, and aldehyde ox-TG, these three types of ox-TGs are selected as template molecules to synthesize surface molecularly imprinted polymers (SMIPs). Polymers that perfectly match the ox-TG template molecules in the site of action and spatial configuration are then synthesized, and specific ox-TGs can be separated using the SMIPs. The oxidized triglyceride molecularly imprinted polymers (OXTG-SMIPs) prepared by the molecular imprinting technology has good specificity, stability, and affinity, and can achieve accurate separation of ox-TGs in frying oil.
