Abstract:
A method of boning (i.e., separating the bone from the edible meat) the dark meat of a chicken by a belt-shaped cutter in which a device for driving the belt-shaped cutter is moved along a profiling means, in order to prevent the cutter cutting deeply into the bone at the joint, or leaving meat attached to the bone. Also disclosed is an apparatus for automatically executing this method. This apparatus enables the attachment and removal of the belt-shaped cutter while it is automatically engaged with the bone of the dark meat of the chicken.
