Abstract:
The present invention relates to a method and composition for the high-yield preparation of gamma-dodecalactone using yeast. More particularly, the present invention relates to a method for the mass production of peach-flavored gamma-dodecalactone, which is a source material for food additives, by reacting 10-hydroxystearic acid using the yeast Waltomyces lipofer. The present invention also relates to a composition for the high-yield preparation of gamma-dodecalactone.
