Abstract:
The present invention relates to a method for the continuous production of cheese, whereby a cheese is continuously produced by continuously feeding a starting milk material to a production line and then processing the same while transferring, said method being characterized by comprising: step (I) for preparing the starting milk material which involves an operation of concentrating milk through a membrane to give concentrated milk; step (II) for adding rennet to the starting milk material in a flowing state, and then adding an acid component thereto almost simultaneously with agitating to give a fluid in which acid coagulation is regulated; and step (III) for heating the fluid with regulated acid coagulation and thus curdling the same. The present invention can provide a method for the continuous production of cheese, whereby a cheese can be produced through continuous steps so that the production time can be shortened and the production space can be saved. According to the method, moreover, the texture of a cheese product thus obtained can be easily controlled so that a cheese product having good qualities can be produced.
