Abstract:
The present invention is a method for manufacturing a fermentation product derived from foliage of a gramineous plant, the foliage of the gramineous plant including at least the crown part of a stem, and the method having: (A) a step for adding a hydration liquid to the foliage of the gramineous plant, performing juice extraction, and separating extracted juice and solid content; (B) a step for adding at least one catalyst selected from sulfuric acid, hydrochloric acid, nitric acid, phosphoric acid, sodium hydroxide, potassium hydroxide, and ammonia, or a combination thereof, to the solid content separated in step (A) and performing hydrolysis; (C) a step for mixing the extracted juice obtained in step (A) and a hydrolysate obtained in step (B) and performing saccharification using an enzyme; and (D) a step for fermenting a saccharification liquid obtained in step (C), through use of microbes.
