Abstract:
[Problem] To provide a method and device for increasing production of and producing a useful substance by filtering and separating the mycelia of basidiomycetes or ascomycetes that have been subjected to submerged culture in a liquid medium, then adjusting the water content of the mycelia to produce a mycelium mass, storing the mycelium mass under a survivable environment, and applying stress, such as low-temperature standstill, to the mycelium mass. [Solution] Provided is a method for producing a useful substance by subjecting the mycelia of basidiomycetes or ascomycetes to submerged cultured in a liquid medium and extracting and purifying the useful substance from the resulting mycelia, and the method comprises the following: a filtration and separation step for filtering a culture liquid containing cultured mycelia and liquid medium in a culture tank and separating the mycelia; a mycelia water content adjustment step for adjusting the water content of the filtered and separated mycelia and producing a mycelium mass; and a stress application step for applying stress to the resulting mycelium mass under a survivable environment and producing a mycelium mass having an increased amount of useful substance.
