METHOD AND DEVICE FOR SEPARATING CHICKEN WING FROM BREAST MEAT WITH CHICKEN WING

A method and a device for separating the chicken wings of edible birds having the wide allowable range of the sizes (variation in diameter of joint parts) of treated birds and capable of eliminating such defects that the bone part of a shoulder joint part on the upper end wing root side is cut off, the method characterized by comprising the steps of, in the separation of the chicken wing of breast meat with chicken wing from which the bones on the breast meat side is removed in a previous step and to which the chicken wing is adhered through the shoulder joint part, pressing guides disposed in a tapered shape against a tendon part on the breast meat side so as to be gradually narrowed along the moving direction of spiral moving shafts while supporting on the two spiral moving shafts at the laterally parallel two points from the underarm of the breast meat with chicken wing, and cutting off the chicken wing joint part by rotating blades disposed in proximity to the guides in a positioned state while gradually squeezing by utilizing the tapered angles thereof. Thus the chicken wind part can be separated from the breast meat.
