A method, device and system for multiplexing and mapping optical signals and demultiplexing and demapping optical signals are disclosed. The said method for multiplexing and mapping optical signals includes: a label object used to indicate the multiplexing and mapping relationship is acquired, and the said label object includes a label and a label header, the said label includes the type indication field and the slot indication field; the said label object predefines a multiplexing and mapping policy about the first optical signal of the first optical path and the second optical signal of the second optical path; according to the said multiplexing and mapping policy, the first optical signal is multiplexed mapped to the said second optical signal. According to the embodiments of the present invention, when multiplexing and mapping optical signals demultiplexing and demapping optical signals, the advantage about saving the signaling overhead can be acquired.
