Abstract:
The present invention relates to a method for enhancing the content of a physiologically active substance inherent in a natural matter using a process of simultaneous mild-temperature extraction and fermentation, and more particularly to a method for extracting the physiologically active substance simultaneously with the fermentation of the natural matter by using the edible thermophilic Bacillus coagulans at a temperature of 45 to 70°C so as to enhance the content of the useful physiologically active substance compared to the conventional method, and also to promote the economic effect by the reduction of the whole processing time due to the simultaneous extraction and fermentation. Thus the method according to the present invention effectively extracts a useful physiologically active substance from a natural matter by means of simultaneous mild-temperature extraction and fermentation, which physiologically active substance may be used in producing health-functional food, pharmaceutical preparations, and cosmetics.
