Abstract:
Disclosed is a method for the enzyme catalysis synthesis of ginsenoside Rh2. The method produces ginsenoside Rh2 by using ginsenoside Rg3 as a substrate, and adding a glucosidase derived from Terrabacter ginsenosidimutans to perform a catalytic reaction; the temperature of the catalytic reaction is 25-50°C, and the pH value is 6.5-9.5. Further disclosed are glucosidase and variants thereof.
