Abstract:
In order to automate a process for removing the backbone of half of the body carcass
produced by halving the carcass of fat stocks such as a pig, a cow or a sheep and to
protect sirloin near a mamillary process, the method for removing backbone of
carcass comprises a step for inserting a bone removing unit between a pair of right
and left halves of the body carcass (P) suspended with the halved sides (w) opposing
by using a bone removing unit (11) integrally equipped with a planar spinous process
guide (12), a halving plate (13) having a U-shaped recess forming portion (131),
and a turn blade (14) for cutting backbone and then applying the haiving plate
against the halved sides and positioning the halving plate, a step for securing
half of the body carcass by grasping the backbone (B1) of the carcass with the U-shaped
recess forming portion and inserting the spinous process guide into the separating
portion (12c) of spinous process formed in previous step and a meat portion adhering
to the spinous process until it abuts against the mamillary process (B4), and
a step for cutting the backbone by inserting the turn blade obliquely from the
rib side.
