Abstract:
A method for evaluating milk products according to lipidic components, being performed in the following steps: (1) establishing a local breast milk database; (2) collecting a milk product sample to be evaluated; (3) determining the content of a characteristic glyceride in said milk product sample; and (4) calculating the score G of said sample according to the following formula: [Equation 1] (I), in which [Equation 2] (II), wherein Hi is the content of the characteristic glyceride i in breast milk, Ht is the total glyceride content of breast milk, and Ai is the content of the characteristic glyceride i in the sample. Starting from the two aspects of compositions and contents of glycerides, the method evaluates infant formula milk powders and raw and auxiliary materials from multiple dimensions, and objectively evaluates the nutritional level of milk products or raw and auxiliary materials at the molecular level, thus providing guidance for subsequent simulation of breast milk at the molecular level.
