Abstract:
The present invention relates to a method for extracting curcumin from turmeric by using water as a solvent and processing an emulsifier and ultrasonication. The method can replace the conventional curcumin extraction method using an organic solvent to eliminate the risk of residual organic solvent and extract a high content of curcumin. When lecithin used as an emulsifier in the present invention is treated with ultrasonication, a high content of curcumin can be extracted at a level similar to the extraction method using an organic solvent. In addition, Tween 80 or Tween 20 can extract a high content of curcumin at a level similar to the extraction method using an organic solvent by a single addition without ultrasonication, and can further increase the extraction content of curcumin when treated with ultrasonication.
