Abstract:
The invention relates to a method of freezing prawn- or lobster-type seafood products, which can be used to produce frozen blocks of products in packaging that is suitable for the storage, transport and/or sales display thereof. In order to produce the aforementioned frozen blocks, the inventive method consists in: placing a defined quantity of the product in a moulding structure; pressing the products contained in said moulding structure in order to reduce the volume, using a cover-type push member which can be locked to the moulding structure such that the moulding structure and push member form a moulding device; freezing the products in said device; extracting the frozen block of product from the device; and packing said frozen block in suitable packaging. The invention also relates to a specific device which is used to carry out said method.
