Abstract:
Novel β-amylase having excellent practical applicability is discovered. Thus, disclosed is practical use applications of the β-amylase. Specifically disclosed is a method for improving a food, which is characterized by allowing β-amylase derived from Bacillus flexus to act on a food containing a polysaccharide or oligosaccharide having an α-1,4 bond derived from glucose as the main chain.
