Abstract:
The present invention relates to a method for industrially producing mogroside, fructus momordicae sugar/wine, and mannitol by using fresh fructus momordicae. The method is characterized by comprising the following steps: S1, keeping freshness and after-ripening, spraying a mixed aqueous solution of ε-polylysine hydrochloride and calcium propionate at intervals, and simultaneously starting ozone circulation at intervals; and spraying an ethephon aqueous solution at the time of after-ripening; S2, preparing mogroside: carrying out water extraction, microfiltration, gradient treatment in combination with resin, concentration and spray drying on the fructus momordicae after keeping freshness and after-ripening to obtain the mogroside; S3, preparing fructus momordicae sugar: compounding the mogroside and a non-sugar sweet substance to prepare the fructus momordicae sugar; S4, preparing fructus momordicae wine: fermenting a macroporous adsorption resin effluent, and mixing a distilled distillate and the mogroside to obtain the fructus momordicae wine; and S5, preparing mannitol: carrying out microfiltration, nanofiltration, concentration and crystallization on a distillation bottom liquid during distillation of the fructus momordicae wine to obtain the mannitol. According to the present invention, four different products are obtained in a continuous production mode, thereby achieving high industrial practicability.
