Abstract:
The present invention provides a method for making acorn bread, comprising: an ingredient preparation step of preparing strong flour, acorn powder, walnut pieces, milk, butter, sugar, salt and yeast; a mixing step of making a mixture by adding the sugar to the milk after warming the milk; a primary kneading step of making a primary dough by mixing the strong flour, the acorn powder, the yeast and the salt with the mixture; a secondary kneading step of making a secondary dough by mixing the walnut pieces and the butter with the primary dough; a low-temperature fermentation step of fermenting the secondary dough such that the secondary dough rises; a separating step of pressing or kneading the primarily fermented dough so as to remove gas from the inside of the dough, rounding the dough so as to smooth the surface thereof, and then separating the same; a resting step of covering the separated dough with cloth such that the dough does not dry, and resting the same; a molding step of removing gas from the rested dough and putting the same in a molding frame, thereby molding the same into a predetermined shape and size; a high-temperature fermentation step of fermenting the molded dough in a fermenter or a fermentation chamber such that the dough rises; a processing step of sprinkling wheat flour on the surface of the high-temperature fermented dough by means of a sieve, and forming a plurality of diagonal slits; and a baking step of putting the dough in a preheated oven and baking the same.
