Abstract:
The method according to the present invention for manufacturing frozen cooked and seasoned noodles comprises: 1) a step for extruding a dough, which is prepared using a starting powdery material comprising 70 mass% or more of common wheat flour and 2-10 mass% a vegetable protein, at a pressure of 80 to 160 kgf/cm2 to give raw noodles; 2) a step for cooking the raw noodles to give cooked noodles; 3) a step for sticking, to 100 parts by mass of the cooked noodles, 25-60 parts by mass of a seasoning liquid to give cooked and seasoned noodles; and 4) a step for freezing the cooked and seasoned noodles.
