Abstract:
[Problem] The present invention addresses the problem of providing a method for manufacturing frozen noodles that loosen easily during cooking, have good mouthfeel, and satisfactorily exhibit the taste of freshly boiled raw noodles. [Solution] It is possible to provide a method for manufacturing frozen noodles that loosen easily during cooking, have good mouthfeel, and satisfactorily exhibit the taste of freshly boiled raw noodles by boiling raw noodles prepared according to ordinary methods to yield boiled noodles, and starting a freezing process within 120 seconds thereafter without the noodles being cooled with flowing water or cold air.
