Abstract:
The resent invention relates to a method for manufacturing a pizza dough, whereby the frozen pizza dough can be topped with toppings, cooked instantly in an oven or the like, and eaten, without a thawing process. More specifically, the method comprises the steps of: 1) mixing dough materials including flour, white sugar, edible oil, salt, yeast, baking powder, a dough enhancer, and water and kneading same to prepare a dough; 2) forming the prepared dough into a ball shape and aging same in a stepwise manner to obtain an aged dough; 3) forming the aged dough into a plate shape; and 4) primarily freezing the plate shaped aged dough at -35 to -55℃ for 8 to 15 minutes, heating the primarily frozen aged dough at 130 to 200℃ during a predetermined time period, and then secondarily freezing the heated aged dough at -15 to -25℃ for 8 to 15 minutes.
