Abstract:
This method for manufacturing surimi or picked fish meat collects fish meat from fish bodies that have been butterflied after removal of internal organs, spine, mefun, and peritoneum from fish bodies from which the head has been removed. The device (200) of the present invention for removing the peritoneum from a fish body comprises: a fillet knife (5), which has grooves (52) on at least one surface (5a) and rotates; and first - third arms (54a - 54c) for pressing the surface of the fish body, to which the peritoneum is clinging, against the surface (5a) of the fillet knife (5).
