Abstract:
[Problem] The objective of the present invention is to provide a method for manufacturing a textured protein material having a meatlike fibrous texture. [Solution] A flat sheet-form textured protein material produced by being pressed, heated, and extruded by an extruder is passed through a cutting blade roller comprising a pair of mutually opposed rollers having a plurality of square-profile annular blades arranged side by side. Cut grooves that are press-cut in the same direction as the direction in which the textured protein material has been extruded are thereby applied on the top and bottom surfaces of said material, which enables a textured protein material having a meatlike fibrous texture to be manufactured.
