Abstract:
The present invention relates to a method for obtaining β-glucan from yeast cells, which involves: initially growing the yeast; autolysing the cells to obtain yeast cell walls; carrying out alkaline treatment of same with sodium hydroxide, which comprises retention periods; carrying out acid treatment of the obtained insoluble product; and collecting and handling same to obtain a powdered β-glucan-enriched product with less than 4% fat.
