Abstract:
A method using gingko nut shells for the preparation of calcium-chelating peptide comprises the following steps: (1) placing the gingko nut shells in an aqueous solution of NaOH, agitating same and, after settling, removing the supernatant liquid, adjusting the pH value of said supernatant liquid to between 2 and 3, then again settling, the precipitate being thus a crude protein of the gingko nut shells; (2) preparing the crude protein of the gingko nut shells as an aqueous solution, adding thereto a proteinase to cause a hydrolysis reaction, then finally inactivating the enzyme and obtaining a hydrolysed solution; (3) precipitating the hydrolysed solution by centrifuging, extracting the supernatant and vacuum-lyophilizing same to prepare a peptide; (4) preparing a solution of calcium salts and the peptide of step (3), conducting a chelation reaction; when the reaction is complete, centrifuging and precipitating to obtain a supernatant, adding ethanol to same and leaving to still, then centrifuging and precipitating and drying the precipitate to obtain the calcium-chelating peptide. The obtained calcium-chelating peptide can be used as an antioxidant, and shows a high removal rate for DPPH free radicals.
