Abstract:
The present invention relates to a method for preparing anthocyanin oligomers by using a coenzyme derived from an Aspergillus sp. strain and, more specifically, to a method for preparing anthocyanin oligomers by fermenting anthocyanin monomers by means of a coenzyme of Aspergillus niger, which is a type of Aspergillus sp. strain. According to the present invention, it was ascertained that there is an effect of preparing anthocyanin oligomers having less concern of contamination and an excellent radical scavenging effect compared with that of conventional anthocyanin monomers, by extracting a coenzyme of Aspergillus niger and going through a fermentation step using the same in order to overcome a contamination problem occurring during a culturing process using Aspergillus niger. In addition, it was ascertained that anthocyanin oligomers fermented by using glucosidase among the enzymes contained in the coenzyme have remarkable fermentation efficiency and a radical-scavenging ability, and the polymerization of anthocyanin oligomers was also ascertained in the fermentation by an enzyme including glucosidase.
