Abstract:
The present invention relates to a method for preparing an Arthrospira platensis extract having increased branched-chain amino acid content and, in particular, to a method for preparing an Arthrospira platensis extract, the method comprising a step of treating Arthrospira platensis with a proteolytic enzyme, followed by fermentation. An Arthrospira platensis extract prepared using the method of the present invention has increased branched-chain amino acid content and comprises leucine, isoleucine and valine in the optimal mixing ratio.
