Abstract:
The present invention relates to a camellia flower extract powder preparation method and a food composition containing powder prepared by means of the preparation method, the method comprising a freeze-drying process or a spray-drying process for a camellia flower extract obtained by means of hot-water extracting camellia flower in a vacuum condition at 75±5℃ for one to three hours. Camellia flower extract powder, which is prepared by means of the method of the present invention, has enhanced function components, i.e. antioxidant and polyphenol components, has excellent solubility compared to powder obtained by means of an existing method, shows relatively excellent sensory test results in color, taste and the like, and has enhanced stability.
