Abstract:
The present application relates to a method for preparing a composition comprising phytic acid from rice bran. According to the present application, a composition comprising phytic acid can be efficiently prepared from rice bran without the process of degreasing rice bran and without the use of a strong acid such as hydrochloric acid or sulfuric acid. The composition comprising phytic acid prepared according to the present application has a low inorganic ion concentration and high antioxidant activity and has antimicrobial activity against fermenting microorganisms and thus can be used for the control of fermenting microorganisms.
