Abstract:
A method for preparing a high-protein concentrated yoghourt before fermentation, the method comprising the following steps: carrying out a heat treatment on a high-protein base material with a decalcification rate of 21.8-44.2% at a pH of 6.6-6.8 and 80-95ºC for 10-30 min; and then reducing the temperature to 40-45ºC, adding 0.05-0.2‰ (w/w) of a starter culture, performing high-endpoint pH fermentation at 40-45ºC until the pH is reduced to 4.8-5.0, and then performing low-temperature after-ripening to obtain a high-protein yoghourt. Compared with a high-protein yoghourt prepared by means of performing whey draining after fermentation, the high-protein concentrated yoghourt has a similar or better soft and delicate texture, water-holding capacity and a higher calcium content. In the method, a moderate decalcification treatment and high-endpoint pH fermentation are combined, which can further shorten the fermentation time and both have a synergistic effect on improving the soft and delicate texture of the high-protein yoghourt.
