Abstract:
Disclosed are a method for preparing a Luo Han Guo sweetner composition from Siraitia grosvenorii and a use thereof. The method for extracting the sweetener composition from Siraitia grosvenorii preferably comprises the following steps: forced ripening of immature Siraitia grosvenorii, juicing, extraction with pure water, removal of impurities, concentration and purification, and other steps to obtain the sweetener composition. Further comprised is a compound sweetener comprising the sweetener composition that can be widely used in foodstuffs, drinks, healthcare products, and household chemicals. The mogroside III, mogroside IIe, and other mogroside content in the Luo Han Guo sweetener composition is controlled so as to enhance the flavor thereof, and a production process for the sweetener composition uses only pure water without the use of organic solvents, such as ethanol, to ensure a greener and healthier production process.
