Abstract:
The present application relates to the field of deep processing of dairy products, in particular to a method for preparing a milk oligosaccharide, a milk oligosaccharide powder prepared using same, and food. The preparation method comprises the following steps: subjecting a whey liquid to at least three ultrafiltrations, subjecting the ultrafiltration permeate to multiple nanofiltration concentrations, subjecting the nanofiltration retentate to separation and purification by means of chromatography, removing a chromatographic collection liquid containing lactose, collecting a chromatographic collection liquid containing sialyllactose, desalting same, and drying same to obtain the oligosaccharide powder. The prepared milk oligosaccharide of the present application and food containing the milk oligosaccharide are mainly cow milk oligosaccharide, have a light yellow or white color, a light flavor, uniform particles, and good thermal stability and solubility. The milk oligosaccharide mainly comprises 3'-sialyllactose and 6'-sialyllactose.
