Abstract:
Disclosed is a method for processing a concentrated clear yam bean juice with a good taste and stable colour value, comprising the steps of: (1) pre-treating the raw materials; (2) enzymatic hydrolysis under a high temperature: adding thermostable amylase, and hydrolyzing by means of enzymes for 30 min at 95ºC; (3) squeezing and extracting juice; (4) pasteurization; (5) adjusting the pH with an acid; (6) enzymatic hydrolysis: adding a glucoamylase 750 ml/T raw material and a pectinase 60 ml/T raw material into the jam bean clear juice after the pH is adjusted, and adding an activated carbon 3 kg/T raw material and a bentonite 1 kg/T raw material; (7) secondary pasteurization: cooling down to 53ºC; (8) filtration: 0.45 μm filtering, carried out twice; and (9) adjusting the pH with an acid, concentrating, and filtering through cardboard to give the product.
