Abstract:
The present invention identified that a sweet potato processed food can be stored at room temperature for a long time while the taste, palatability and the like thereof immediately after processing are maintained, the sweet potato processed food being prepared through a process comprising: a first step of washing and drying sweet potatoes; a second step of putting the sweet potatoes of the first step in silver foil-coated wrapping paper one by one and wrapping the same; and a third step of treating and sterilizing the wrapped sweet potatoes of the second step at 121-150°C for 25-35 minutes. Therefore, the income of sweet potato farms is expected to increase by using a method for preparing a sweet potato processed food storable for a long time, not requiring a separate cooking process, and enabling distribution at room temperature and long-term storage.
