Abstract:

　This method for producing 2-deoxy-scyllo-inosose involves culturing 2-deoxy-scyllo-inosose-producing Escherichia coli in a medium containing at least one selected from (a) a natural culture medium component in a specific quantity with respect to the entire culture medium, (b) a component such as phytic acid contained in a specific quantity with respect to the entire culture medium and (c) a component such as pentose contained in a specific quantity with respect to the entire culture medium, to produce 2-deoxy-scyllo-inosose; and recovering the 2-deoxy-scyllo-inosose thus produced from the medium.
