Abstract:
It is intended to provide a method of producing Baumkuchen whereby distortion in the shape of Baumkuchen occurring in the production process can be easily and adequately prevented, and a production apparatus therefor. In producing Baumkuchen by alternately repeating the procedures of coating the whole outer periphery of a shaft with dough and baking the dough, the dough is scraped off from the whole outer periphery at the both ends of the shaft before baking exclusively at the early stage of the production until the number of repetitions attains a definite value. Owing to this, a smaller number of layers are formed at the both ends of the Baumkuchen than other parts so that the outer diameters at the both ends are reduced compared with the inherent size. Thus, a topical enlargement in the outer diameter at the both ends of Baumkuchen, that is caused by running of the dough at the ends of the shaft before baking, can be prevented.
