Abstract:
Provided is a method that is for producing a coffee extract and that can extract the flavor components of coffee separately from the bitter components. The coffee extract is obtained by a method containing the belowmentioned steps a) to c): a) a step for housing coffee granules in a granule housing section in the state of being nearly sealed by a braking member; b) a step for performing extraction by introducing an extraction solvent to the granule housing section from a first direction; and c) a step for recovering the coffee extract accumulated in the granule housing section from the first direction.
