Abstract:
Disclosed is a soybean milk coffee whitener, the emulsified state of which is not deteriorated even after a long-term storage. The soybean milk coffee whitener is suppressed in feathering when added into coffee, and does not destroy the flavor of coffee.
The coffee whitener having improved stability can be prepared using soybean milk produced by being subjected to a high-temperature immersion treatment before a friction grinding step, while additionally using an organic acid monoglyceride and a sugar ester in combination. The coffee whitener preferably has an average HLB of 9-14.
