Abstract:
[Problem] To provide an enzyme protein which is produced by a highly safe microorganism and has an activity of isomerizing D-psicose to D-allose. [Solution] A protein having an activity of isomerizing D-psicose to D-allose, which is any one of the following proteins (a) to (c): (a) a protein having an activity of isomerizing D-psicose to D-allose, which comprises the amino acid sequence represented by SEQ ID NO: 1 that is originated from strain 710 of a microorganism belonging to the genus Streptomyces (accession No.: NITE BP-01423) or the amino acid sequence represented by SEQ ID NO: 2 that is originated from strain 720 of a microorganism belonging to the genus Streptomyces (accession No.: NITE BP-01424); (b) a protein having an activity of isomerizing D-psicose to D-allose, which comprises an amino acid sequence produced by substituting, adding, inserting or deleting one or several amino acid residues in the amino acid sequence represented by SEQ ID NO: 1 or SEQ ID NO: 2; and (c) a protein having an activity of isomerizing D-psicose to D-allose, which comprises an amino acid sequence having a 60% or more homology with the amino acid sequence represented by SEQ ID NO: 1 or SEQ ID NO: 2.
