Abstract:
A method for producing a dry article which comprises drying a subject to be dried by microwave irradiation under reduced pressure, characterized by comprising a combination of a step A wherein the subject to be dried is dried under controlled microwave irradiation while maintaining the temperature of the subject to be dried at 50°C or lower (preferably 45°C or lower) is combined with a step B wherein overheated steam is generated under controlled microwave irradiation and the subject to be dried is pasteurized with the overheated steam; and a reduced-pressure dryer which is stable for the above-described method. Thus, a dry article, in particular, a safe dry food can be efficiently produced by conducting drying and pasteurization in a single apparatus.
