Abstract:
Provided is a method for producing an edible oil having a good and stable flavor. Also provided is an edible oil which is produced by the method. A method for producing an edible oil characterized by comprising deodorizing a blended oil obtained by mixing two or more kinds of vegetable oils selected from among vegetable oils which have been deacidified using an alkali but not deodorized and/or vegetable oils which have been deacidified by steaming but not deacidified using an alkali. An edible oil produced by the aforesaid method has a good fresh flavor and, therefore, can be taken as such. Moreover, the edible oil has high flavor-stability against heat and, therefore, causes no damage to the flavor of food in the case of using in heat cooking.
