Abstract:
A method for producing a fractionated fat, the method comprising
(a) the step of melting a raw-material fat,
(b) the step of cooling the fat to a temperature t (°C) which satisfies (A-12)≤t≤A where A (°C) is the melting temperature of the fat,
(c) the step of making α-form crystal pre-seeds present in the fat having said temperature, and
(d) the step of forming β-form crystal seeds from the pre-seeds.
