Abstract:
Provided are a method for producing flavor ingredients such as diallyl sulfide (ALS) and diallyl disulfide (ALDS), and a technology related to such method. Flavor ingredients such as diallyl sulfide (ALS) and diallyl disulfide (ALDS) are generated by applying cystathionine lyase to a flavor ingredient precursor such as S-allyl cysteine (ALC) or S-allyl cysteine sulfoxide (ALCSO).
