Abstract:
The purpose of the present invention is to provide: a method capable of producing, in a simple manner, a gelatinous composition that exhibits excellent emulsion stability despite containing a phospholipid; a method capable of producing, in a simple manner, an emulsion composition that exhibits excellent feeling of use and emulsion stability; a gelatinous composition that exhibits excellent emulsion stability; and an emulsion composition that exhibits excellent feeling of use and emulsion stability. This method for producing a gelatinous composition is characterized by including: a step for obtaining a surfactant solution by dissolving a phospholipid and a cyclic lipopeptide biosurfactant in a polyhydric alcohol or in a mixed solvent comprising water and a polyhydric alcohol; and a step for obtaining the gelatinous composition by mixing an oily component with the surfactant solution, with the mass ratio of the cyclic lipopeptide biosurfactant relative to the phospholipid in the gelatinous composition being 0.25 or more.
