Abstract:
Provided are a microorganism that is useful as an expression host for γ-Glu-Val synthase and a method for producing γ-Glu-Val-Gly using γ-Glu-Val synthase that is expressed in the microorganism. Starting with Glu, Val and Gly, γ-Glu-Val-Gly is produced using γ-Glu-Val synthase that is expressed with the use of a bacterium such as a bacterium of the genus Escherichia, said bacterium having been modified so as to lower the activity of a protein (YBDK) encoded by ybdK gene, as an expression host.
