Provided is a grain-oriented electromagnetic steel sheet production method which enables stable production of a grain-oriented electromagnetic steel sheet that has superior magnetic characteristics and that exhibits less variation in iron loss in a coil longitudinal direction. The grain-oriented electromagnetic steel production method according to the present invention comprises a step for subjecting a steel slab to hot-rolling, optionally annealing the same, obtaining a cold-rolled plate having a final thickness by subjecting the hot-rolled product to either one round of cold rolling or two or more rounds of cold rolling including intermediate annealing, subjecting the cold-rolled sheet having the final thickness to decarburization annealing, and performing secondary recrystallization annealing thereon. Immediately before a final cold-rolling, the steel sheet is heated to a heating temperature of 100-350°C at a temperature increase rate of at least 100°C/s. The steel sheet is bitten into a first path of the final cold-rolling within 5 seconds of having reached the heating temperature.
